Tandoori Chicken Recipe

A dish which has been so popular, that it has been introduced in many Michelin-Star restaurants. If your planning to make a chicken dish this weekend; This has to be your go-to recipe. A gem on its own, Tandoori Chicken has been the flag bearer of North-Indian appetizers. Tandoori Chicken is served with a side of mint or coriander chutney, with some raw onion rings and a slice of lemon.
What is Tandoori Chicken?
Tandoori Chicken is a popular North-Indian appetizer, where the chicken is marinated with hung-curd, ginger-garlic paste and various Indian spices. The chicken is then kept overnight so as to let the marination impart its flavour to the chicken. Then it is grilled in a "Tandoor", meaning a large clay one. This kind of cooking technique is quite popular in different parts of India and Middle East countries.
This tender and juicy chicken is flavoured with burnt charcoal. This is done so as to give a smoky flavour to the chicken. The rich history of the Indian Rajputs & the Mughals, have made us discover various kind of chicken recipes around the Indian subcontinent. Tandoori Chicken has been a major part in the royal kitchens. The Rajputs & Mughals both have helped us in finding this gem.

Can we make it without a Tandoor?
The answer is a big yes. In this recipe the marinated chicken is going to be grilled in an Oven. The smoky charcoal flavour will be imparted in the end by covering method. The cooked grilled chicken in the end will be kept in a big pot. After that will take the burnt coal in a small bowl with 2tbsp of clarified butter on top. Will keep this small bowl of charcoal in the middle of the pot which has the cooked chicken. Then will cover it with a lid and let the smoky flavour, get infused into the chicken. Will keep it for 5-7 minutes.
How do we make it?
- Firstly we need to make hung curd. For this we need 1/2 cup curd. Take a muslin cloth or a clean cloth now. Add the curd to it and hung it somewhere. This will help in getting away with the all the moisture the curd has. Will keep it hung like this for 2-3 hours.
- When our hung curd is ready, we'll take a big bowl. Add the hung curd to it. Add 1tbsp each of kashmiri red chilli powder, turmeric powder, coriander powder, roasted cumin powder, black salt, black pepper and garam masala powder. Add 2tbsp of mustard oil and 1tsp lemon juice to it. Mix it nicely.
- Now will take our chicken. Will take 8 pieces in total - 4 drums & 4 thighs. With the use of a knife, make insertions or cuts on it so that the marination can go inside. Now add the chicken to the marination. Mix it nicely, cover it and keep it in the refrigerator for 6 hours.
- Now will turn on our Oven. Preheat the oven at 220 degree centigrade for 15 minutes. Now put a baking tray under the wire racks. Keep your chicken on the wire rack. Grill one side of the chicken for 15 minutes. Then turn the chicken and grill it for another 15 minutes.
- Now will place the cooked chicken in a big cooking pot. Take some hot burning coal in a small bowl. Add 2tbsp clarified butter to it and keep the bowl in the centre of the cooking pot. Cover it with a lid and let the smoky flavour do the work.
- Will keep it cover for 5-7 minutes, in order to impart a smoky flavour to the chicken.
- Our Tandoori Chicken is ready now. Sprinkle some chaat masala on top of it. Serve it with a side of coriander or mint chutney. Add some onion rings and a slice of lemon on side.

- 500 grams chicken (4 drums & 4 thighs)
- 1/2 cup hung card
- 2tbsp ginger garlic paste
- 1tbsp black salt
- 1tbsp kashmiri red chilli powder
- 1tbsp turmeric powder
- 1tbsp coriander powder
- 1tbsp roasted cumin powder
- 1tbsp black pepper
- 1tbsp garam masala powder
- 1tbsp chaat masala powder
- 1tbsp lemon juice
- 2tbsp mustard oil
- Charcoal
- 1tbsp clarified butter
