Mutton Pulao

The dish is easy to make and also the ingredients are easily available. Every state of India has modified this recipe according to their taste. In the southern states of India, this dish is flavoured by curry leaves; While on the northern side, the recipe is flavoured with aromatic spices like cinnamon, cardamon, peppercorn, bay-leaf and cumin. The dish has been a go to in many Indian and Pakistani households.

Presenting the epic drama called - "Mutton Pulao." A simple pot-based basmati rice dish, where tender pieces of mutton is cooked and flavoured with simple aromatic Indian spices. The mutton is cooked with long-grained basmati rice, so as to impart the flavours and create a fusion with whole spices and other simple ingredients. This simple Mutton Pulao recipe is best suited for your lunch or dinner menu. The ingredients are easily available at home, and it also doesn't require any kind of marination. 

This easy to make recipe requires less effort and time. This recipe will surely make you forget, Mutton Biryani. This Mutton Pulao Recipe is served with an Onion Raita on side or a Coriander Chutney. The fragrance of the rice will melt your heart and make you crave for this recipe. Steps to make this recipe -

  1. Take 500 grams of long-grain basmati rice and rinse it nicely. Soak the rice in water for 20 minutes. In the mean time will cook our mutton and sauté our onion with spices.
  2. Firstly we need 750 grams of mutton. Take a pressure cooker and keep it at a high flame. Add the mutton to it with 3 glasses of water. Add 1/2 a tsp each of salt and turmeric powder. Close the cooker and let the mutton cook till 2-3 whistles.
  3. After 2-3 whistles of the pressure cooker, turn off the flame. Will wait till all the steam releases.
  4. Now will take a Kadahi/Pot and add 4-5tbsp of cooking oil. Will keep it at a high flame. After 2-3 minutes when the oil is hot, add 1tsp cumin, 1 bay-leaf, 8-9 peppercorns, 6-7 cloves, 1 small cinnamon stick and a small nutmeg thread. 
  5. When the seeds starts to crackle, add 1 tbsp each of chopped ginger and garlic. Sauté it for a minute and then add the sliced onions. Roughly 2-3 onions should be enough. Will also add 2-3 chopped green chillies to it. Sauté it nicely for 7-8 minutes, till the onions are lightly pinkish in colour.
  6. Now will open our pressure cooker. Will just take all the mutton out of it and add it to the onion. Will not throw the residue stock of the mutton. Will keep it for later.
  7. Mix and sauté the mutton nicely with the onion. Add 1 1/2 salt, 1tsp coriander powder, 1tsp cumin powder, 1tsp black pepper, 1tsp turmeric, 1tsp red chilli powder and 1tsp garam masala powder. Mix it nicely and cook for another 5-7 minutes.
  8. Now drain the soaked rice and add it to the mutton with 3 glasses of water. In order to give more flavour, will use the leftover water off the mutton for this. In total we need to add 3 glasses of water, so use whatever water is left in the cooker plus add accordingly to match three glasses.
  9. Check the seasoning accordingly and see if you need to add more salt or not. I usually 1tsp salt more in the end, just to adjust the seasoning.
  10. Keep the flame high and let the rice and mutton cook for 10-15 minutes or until the water has almost dried up.
  11. Now will lower the flame and cover it. Cook for another 10-15 minutes. Your Mutton Pulao is ready. Serve it hot with an Onion Raita/Curd Mix and a Coriander Chutney.
Ingredients Required -
  • 750 grams mutton/goat meat
  • 500 grams long-grain Basmati Rice
  • 3 red onions sliced
  • 1tbsp chopped garlic
  • 1tbsp chopped ginger
  • 2-3 green chillies chopped
  • 1tsp cumin seeds
  • 1 bay-leaf
  • 6-7 cloves
  • 8-9 peppercorn
  • 1 small Nutmeg thread
  • 1 small cinnamon stick
  • 2tbsp salt
  • 1 1/2tsp turmeric
  • 1tsp red chilli powder
  • 1tsp black pepper
  • 1tsp cumin powder
  • 1tsp coriander powder
  • 1tsp garam masala powder
  • 4tbsp oil
  • 3-4 glasses of water
