Hyderabadi Chicken with Southern Fried Rice

The recipe today is something which has a fusion of Hyderabadi & Chinese cuisine. Hyderabad has been always a city to explore. The food of this city is considered to be the fieriest, catering to every segment of the society. Hyderabadi cuisine has been at the forefront when it comes to diversity; From the royals to local people, the food binds all.
The name of the recipe which I'm going to share with you is called -
"Hyderabadi Chicken with Southern Fried Rice."
The recipe uses ingredients, mostly popular in the southern states of India. The main character of today's drama is my favourite. It's called Curry Leaves, grown mostly in the state of Karnataka, India. These are aromatic herbs, also called "Sweet Neem leaves." In this recipe, "Curry Leaves" or as we say in India, "Kariya Patta" is going to play an important role. Following our vision of using fresh & local ingredients with simple cooking techniques, this recipe will surely touch your heart and tastebuds.
Moving forward, let see what are the ingredients required for this recipe.
Ingredients Required -
- 250 grams of diced boneless chicken
- 2 cups of cooked rice
- 4-6tbsp curd
- 1 red onion diced (For the chicken)
- 1/2 red onion chopped (For the fried rice)
- 1 carrot chopped (Small dices)
- 1/2 capsicum chopped
- 4-6 garlic pods finely chopped
- 2 red chilli slit & 2 finely chopped
- 2tbsp soya sauce
- 1tbsp schezwan sauce
- 1tbsp ketchup
- 2tbsp ginger garlic paste
- 2 tbsp red chilli powder
- 1tbsp turmeric
- 1tbsp garam masala
- 1tbsp ground black pepper
- 8-10 curry leaves
- 3-4 curry leaves finely chopped
- 1tsp mustard seeds
- 50 grams green onion finely chopped
- Salt required as per taste
- 1tbsp sugar
- Oil as required
Preparation Time - 40 minutes, Servings - 4
Steps to make the Hyderabadi Chicken -
- Take a bowl and add the diced chicken. Marinate it with 2tbsp of curd, 1tbsp of ginger garlic paste, 1tsp of red chilli powder, 1tsp of turmeric powder, 1tsp of garam masala, chopped curry leaves and 1tsp of pepper. Mix it nicely and keep it aside for an hour.
- Now take a pot and add oil to deep fry the marinated chicken. Almost cover 1/2 the pot with oil to deep fry the chicken. Keep it at medium flame and let the oil turn hot.
- When the oil is hot, drop the marinated chicken one by one. Cook until its reddish brown. Tip - You can check the chicken is cooked of not by just taking it out from the oil and cut it into two half. If the inside part is white, it means the chicken is cooked. If it's red, it require's more cooking.
- Fry all the chicken pieces like this and keep it a tray with a paper below so that it soaks the oil.
- Now, take an empty bowl and add 2tbsp of curd, 1tbsp red chilli powder, 1tbsp ginger garlic paste, 1tbsp sugar, 1tsp salt and 1tbsp oil. Mix it nicely. This we will use for the chicken as a base.
- Heat oil in a pot. Keep it at medium flame. When the oil turns hot, add 2-3 chopped garlic, 4-5 curry leaves, and 2 slit red chilli. Sauté it nicely. Now add the diced onions and cook it for 2-3 minutes. Add the curd mixture to it and sauté again. Cook for another 2-3 minutes.
- Add the fried chicken to the sauce and coat it nicely. Cook for another 2-3 minutes, your Hyderabadi Chicken is ready.
Steps to make the Southern Fried Rice -
- Add 3tbsp of oil in a pan. Keep it at a medium flame. When the oil turns hot, add 2-3 chopped garlic and 1/2 chopped onions. Sauté it. Add 4-5 curry leaves to it with a tsp of mustard seeds. Cook for 2-3 minutes and then add the chopped capsicum and carrots. Sauté it nicely and cook it for another 2-3 minutes.
- Now add the cooked rice to it. Mix it slowly. Add 1tbsp of soya sauce, ketchup and schezwan sauce respectively.
- Season the rice with some salt and pepper. In the end, sprinkle some chopped green onions on top.
- Your Southern Fried Rice is ready.
- Serve it in a bowl or a plate with the Hyderabadi Chicken.
